With help from my trusty side kick Jenai (who you may remember from <a href="http://ohsocheesyblog.blogspot.com/2011/01/vegas-baby.html">here</a>, <a href="http://ohsocheesyblog.blogspot.com/2011/02/sacramento-in-house.html">here </a>and <a href="http://ohsocheesyblog.blogspot.com/2011/01/morning-after.html">here</a>) and Leighton,<br />

Hawaii's culinary environment stems from early plantation workers and a strong military influence creating a wonderful blend of Asian, Polynesian, Portuguese and American flavors. And because I am such an eclectic culinary creator, I added anything and everything interesting that happened to be within eyesight.<br />

My expectations were quite high. I mean honestly, isn't this the cheese capital of the world? At <a href="http://www.eattchicago.com/">EATT </a>in Chicago, I ordered a side of the mac and cheese and was pleasantly surprised at the size. It was a bit larger than a typical side order and quantity always makes me happy. I was also pleased with the crispy burnt sections on the top. I love a slight burnt cheese flavor. <br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgpLwJWsvA_B5XMphWe8ESAcFX_2yzzYvHPwk4yxB1SHMxW1vQ2q_PmGTjABaC-APD35xqEB4hsSH_PqaNZ4fIVzRU9w7c3mUk-y8O_1VfsgbuuEgLx2itFwA59bhsMdkMvdQnywL5oYv4/s1600/EATT+in+Chicago.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgpLwJWsvA_B5XMphWe8ESAcFX_2yzzYvHPwk4yxB1SHMxW1vQ2q_PmGTjABaC-APD35xqEB4hsSH_PqaNZ4fIVzRU9w7c3mUk-y8O_1VfsgbuuEgLx2itFwA59bhsMdkMvdQnywL5oYv4/s320/EATT+in+Chicago.JPG" width="320" /></a></div><br />
I really should have stopped at this point. Sadly, I took a bite. Much to my cheese loving dismay, this mac was really bland and watery. <br />
<br />
My advise, when in Chicago, stick to the pizza.Oh So Cheesyhttp://www.blogger.com/profile/00972616245699225552noreply@blogger.com1tag:blogger.com,1999:blog-6094171113183742338.post-80066922286213148622011-05-23T14:09:00.000-07:002011-05-23T14:09:24.247-07:00Richy Rich Lobster MacI love lobster. And, I love mac. Together, this can be a magical experience. While in Palm Desert this past weekend, I visited <a href="http://www.mammagina.com/menu_dinner.htm">Ristorante Mamma Gina</a>. I don't even know if they have anything else on their menu because as soon as I saw the lobby mac, my mind was made up. Done and done.<br />

The noodles were cooked perfectly and the sauce was rich and creamy. I called and asked for the types of cheese used because I wasn't certain but the less than kind person who answered the tele refused to "give recipes over the phone." Interesting. Velveeta perhaps? Kidding. Overall, this mac was pretty good. It was not to die for and lets be honest, life is short so lets try to only eat those meals that reach the level of perfection.Oh So Cheesyhttp://www.blogger.com/profile/00972616245699225552noreply@blogger.com0tag:blogger.com,1999:blog-6094171113183742338.post-71268705101265492282011-05-13T14:16:00.000-07:002011-05-13T14:16:26.498-07:00Country Living<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiy0HygOo4OTTeaMSgSaVSYwP4xgD8Xxz5gcim-RnbbfVG5XcQFH4YD8AQOj0wue_qSWEHn1PSNbMzBK-lGRMfiC0CSjVAEEypYXyKL7lAgl1VXbeqjI6KpimGsKi2HNy6CpmUUhB5wjOE/s1600/taysays.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="72" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiy0HygOo4OTTeaMSgSaVSYwP4xgD8Xxz5gcim-RnbbfVG5XcQFH4YD8AQOj0wue_qSWEHn1PSNbMzBK-lGRMfiC0CSjVAEEypYXyKL7lAgl1VXbeqjI6KpimGsKi2HNy6CpmUUhB5wjOE/s640/taysays.jpg" width="640" /></a></div><div class="separator" style="clear: both; text-align: center;"><br />

<br />
<a href="http://www.countryliving.com/recipefinder/macaroni-gruyere-cheese-recipe-clx0311?click=main_sr">Today's recipe</a> comes from Country Living magazine.<br />
<br />
When my mom and I spotted the recipe in the magazine last weekend we knew we wanted to try it!<br />
<br />
I usually reserve making macaroni and cheese recipes for Sundays because they usually take awhile, but this one was SO easy and simple! The recipe was really yummy. I thought it might be bland because of how few ingredients are in the recipe, but the gruyere was complex tasting and perfectly gooey.<br />
<br />
I also made a DELICIOUS and simple dessert inspired by a menu item from one of my favorite Phoenix restaurants, <a href="http://www.galloblancocafe.com/">Gallo Blanco.</a><br />
<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhjMo229si3NIOluS2FnWXItxFbQg46CNVnOC0XfDSAYt2eNaucmrIGSXUGxWaNProDugec7kIzeERboBJybGQwd9nE0JiqEa19GcuBcOxQl3eHQzGdQnMzaJXeSdl0VvSS_anlinYhaVc/s1600/dessert.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="640" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhjMo229si3NIOluS2FnWXItxFbQg46CNVnOC0XfDSAYt2eNaucmrIGSXUGxWaNProDugec7kIzeERboBJybGQwd9nE0JiqEa19GcuBcOxQl3eHQzGdQnMzaJXeSdl0VvSS_anlinYhaVc/s640/dessert.jpg" width="480" /></a></div><br />
<br />
To make this dessert, simply layer chocolate pudding and marshmallow fluff, then stick some graham crackers on top! It's like a s'more in a bowl.<br />
<br />

I ate it so often that my mom would get creative with the ingredients to make sure I had a well balanced meal. My favorite as a little munchkin was mac and cheese with hot dogs. So tasty! Now that I am grown and much more mature (no giggling) I have moved on to delicious bbq'd sausage in my mac. <br />
<br />
Hubby hubbs was bbq'ing chicken for dinner so I offered to create a smashing side dish. Obviously I meant delicious mac. I used orecchiette noodles. They are perfect for mac because they cup your ingredients nicely so you get an array of flavors in each bite. Success.<br />
<br />
I sauteed some onions and jalapenos, <br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiG5HLQws3O6qf7wUqO-Ux_d8_P4QnwXURdTeC-kww_0jSpNBZgkS4aayiKjjwrU1AZapU8OOErCiSG5IKkqNrwvLZMsOZdZg491tRhvUOjW_PF65Onru2UEtq_RYQTtmt_EQLPchbTudQ/s1600/Bonfire+001.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"></a></div><table align="center" cellpadding="0" cellspacing="0" class="tr-caption-container" style="margin-left: auto; margin-right: auto; text-align: center;"><tbody>

<a href="http://www.petescafe.com/menus.html">Pete's Cafe and Bar</a> in Los Angeles has been my long time favorite spot for french fries, chipotle fries to be exact. I could eat them every day. That is how magical they are. <br />

Their mac is made of sharp white cheddar, asiago, goat cheese (yuck), and tarragon. I loathe goat cheese so I was a bit hesitant to order this mac. But, surprisingly, I couldn't taste any remnants of goat at all. Thankfully. Even though I ate all of it, I did not love it. Probably because I was fixated on the chipotle fries. Did I mention how glorious the fries are? <br />

<br />
<br />
<br />
One of hubbs' fav dining spots is <a href="http://www.beachwoodbbq.com/">Beachwood BBQ</a>. He mostly likes it because it has a terrific variety of delicious micro brews. <br />
<br />
After a quick bike ride down to Beachwood BBQ, we ordered a couple of beers, our usual fried pickles (magestic), a pulled pork sandwich and contemplated trying something new. That is when we noticed mac and cheese. Not sure if this is new to the menu or if I have simply indulged in too much beer on all of my prior visits because I don't remember seeing it on the menu before.<br />
<br />
Beachwood BBQ's Baked M&C boasts ingredients including green onion, bacon, chilies, beer, and Gruyere. <div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiJifXkxnc_yuwYwUFAgF01m240FP4gPFs_jVGKL2cno4PVBmnz2nYuLYGw7keSa2muQSetaQJmZl9iEhH9WWfehZCVFaN6EGPlllIyE-rJjfWW1-e_ks5u8Vn86g2OF3c1b2-S4yXzn4o/s1600/BBQ.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="298" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiJifXkxnc_yuwYwUFAgF01m240FP4gPFs_jVGKL2cno4PVBmnz2nYuLYGw7keSa2muQSetaQJmZl9iEhH9WWfehZCVFaN6EGPlllIyE-rJjfWW1-e_ks5u8Vn86g2OF3c1b2-S4yXzn4o/s400/BBQ.JPG" width="400" /></a></div><br />
Sounds majestic. Well, sadly, it is not. The first bite was bland. I added some salt. Better, but not brilliant. Next, I made a concoction of Beachwood BBQ's sauces: hot sauce, sweet sauce and mustard. It was pretty tasty when doused in random sauces. But, I am a purist and prefer my mac non-doused.<br />
<br />
My advise: stick to the beer.Oh So Cheesyhttp://www.blogger.com/profile/00972616245699225552noreply@blogger.com1tag:blogger.com,1999:blog-6094171113183742338.post-9688383311099365382011-04-08T10:25:00.000-07:002011-04-08T10:25:48.903-07:00Trio Tops Them All<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhpBqTAH8GjoIJktrXV4ME8MQsMzwzaLllgt7VyYjrrd9Oqn9mOghH0jETcIoTo98Thst10HuEKcbof77Ehl43foTBI_6eSSTGFuUB8f3tH_V7srSn2JYdDxai2fR93VHtiR4yF-_DUBVY/s1600/taysays.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="72" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhpBqTAH8GjoIJktrXV4ME8MQsMzwzaLllgt7VyYjrrd9Oqn9mOghH0jETcIoTo98Thst10HuEKcbof77Ehl43foTBI_6eSSTGFuUB8f3tH_V7srSn2JYdDxai2fR93VHtiR4yF-_DUBVY/s640/taysays.jpg" width="640" /></a></div><div><br />

</div>Today's review comes from my new favorite restaurant in Palm Springs, <a href="http://www.triopalmsprings.com/index.php">Trio. </a><br />
<div><br />
</div><div><a href="http://www.triopalmsprings.com/index.php"></a>I decided to try this place after reading stellar Yelp reviews about their macaroni and cheese. </div><div><br />
</div><div>The place did NOT disappoint. It is one of the BEST macaroni and cheese dishes I have ever had. It is totally worth the (expensive) price tag of $17. The portion is also HUGE, so you will definitely have some leftovers to enjoy the next day or two. </div><div><br />
</div><div>They start with five different kinds of cheese; Fontina, Goat, Bleu, Cheddar and Romano. The dish also has loads of bacon, green onions, tomato and bread crumbs. </div><div><br />
</div><div>I got a to-go order and the smell was so delicious I couldn't even wait to get home before I had to rip open the container and try a bite (or five). </div><div><br />
</div><div>Well done Trio! A+</div><div><br />

<tr><td class="tr-caption" style="text-align: center;">Clockwise from bottom: Grace's ramekin delight, Kelly's gourmet goodness, and Kimi's cheesy masterpiece </td></tr>
</tbody></table><br />
<br />
This mac was especially unique because Grace used wide egg noodles, which I have never had in m&c before. She mixed fontina, mozzarella, and parm in with heavy cream, milk, cayenne and nutmeg until it thickened. Then she mixed in smoked turkey ham and parsley. She filled the ramekins, topped with panko bread crumbs and extra cheese for good luck, she baked it and voila - a creamy, cheesy, flavorful mac dish is made! This mac would be perfect for a family meal including kids and would make a nice entree as it is pretty filling with the ham.<br />
<br />
Next, Kimi made us a wonderful six cheese delight that won the coveted "Cheesiest" prize! And, to be clear, by prize I mean the praise and affection of the judges. No money in this competition! <br />
<br />
<div class="separator" style="clear: both; text-align: center;"></div><div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhC83ExztGevkWOJeibTTW1Y3ddAVw8xy7vxGSknfSLE2T0bt4rJC-yZX1y5WplqsCh266Kt_0xQebmFjkXC44ojJmMFWNdEt0UEm3Q6JFXImpYYd-Xa6p9SqfxPFa-1RlJe2pkWshWwlY/s1600/mac+and+cheese-off+002.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="300" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhC83ExztGevkWOJeibTTW1Y3ddAVw8xy7vxGSknfSLE2T0bt4rJC-yZX1y5WplqsCh266Kt_0xQebmFjkXC44ojJmMFWNdEt0UEm3Q6JFXImpYYd-Xa6p9SqfxPFa-1RlJe2pkWshWwlY/s400/mac+and+cheese-off+002.jpg" width="400" /></a></div>I love a hidden jolt in my mac and Kimi really made that happen nicely. The first bite has a nice all-American flavor but moments later this goodness is met with a powerful kick of chili. Kimi's international cheesy concoction was made up of Spanish onion, cream cheese, heavy cream, sharp cheddar, parm, swiss, jack, mozzarella, and get ready for this - Chinese chili paste! Brilliant.<br />
<br />

Kelly's mac tasted like it was the showcase item in this month's Food and Wine Magazine. The texture was excellent as it had a nice creaminess to it. It was wonderfully flavorful; the garlic, herbs, wine, cheese combo and white truffle oil combined to create a decadent flavor. I noticed several judges go back for second helpings of this mac. I love gifts, don't you?! The book has the most creative m&c recipes with really nice photos. I have been dying to create something special ever since receiving it. If you are in the market for a book exclusively detailing mac and cheese, I highly recommend this one.<br />
<br />
Because I was feeling the need to be healthy, I decided on Marlena Spieler's Macaroni and Cheese "Broccolissimo" as a side dish to the yummy meal Hubbs was preparing.<br />
<br />
First, blanch the broccoli and set aside. <br />
<br />
<table align="center" cellpadding="0" cellspacing="0" class="tr-caption-container" style="margin-left: auto; margin-right: auto; text-align: center;"><tbody>
<tr><td style="text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEh16fiV-HQy6laT-MtB-2z1TxBjiwnx7VCjI2cknyFg9N1kC-yLz7afG0FCiMjPaljg6qlkoa_jWRN81jfBFjtqrzThXWm5Ay7os8puA-CD5J4r5M1JRulZeepXExf3aWez_RmRT2kOoZg/s1600/broccoli+pic.JPG" imageanchor="1" style="margin-left: auto; margin-right: auto;"><img border="0" height="213" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEh16fiV-HQy6laT-MtB-2z1TxBjiwnx7VCjI2cknyFg9N1kC-yLz7afG0FCiMjPaljg6qlkoa_jWRN81jfBFjtqrzThXWm5Ay7os8puA-CD5J4r5M1JRulZeepXExf3aWez_RmRT2kOoZg/s320/broccoli+pic.JPG" width="320" /></a></td></tr>
<tr><td class="tr-caption" style="text-align: center;">Broccoli: the healthy part</td></tr>
</tbody></table><br />
Next, melt butter (the more the merrier), sprinkle in some flour and add milk. Season with salt, cayenne and nutmeg. I love the idea of nutmeg in this recipe - it is so festive. Add a bunch (this is the exact measurement) of cheese. The recipe calls for Sprinz or Asiago or a combo of Appenzeller, Jack or Parmesan. My suggestion: use whatever type you have. I used Mexican cheese, some smokey Gruyere, Cheddar, Mozza, and Parm. <br />

I really do. When I lived in Hawaii, I would come back to Cali to visit family and friends and would always go grocery shopping at TJ's before returning. You heard me. I would literally pack a bunch of TJ's food in my luggage for a tasty indulgence while on the rock. <br />
<br />
TJ's rarely fails me. This is simply another example. As I am sure you can imagine, much to my savory delight, I stumbled across TJ's version of fried mac and cheese balls. As we have already established, I love fried food and also love mac - if you are doubting my loyalty to the mac, you really haven't read enough of this blog.<br />
<br />
Sorry, I don't have a pic of the box. Hubbs thought it would be a brilliant idea to delete half of my photos... So busted.<br />
<br />
After a failed attempt to enjoy the balls at <a href="http://www.fred62.com/">Fred62</a> (remember that <a href="http://ohsocheesyblog.blogspot.com/2011/01/mac-daddy-and-cheese-balls.html">blog entry</a>?), I have to admit my standards were not very high when hubbs decided to make this treat. <br />

My darling friend <a href="http://ohsocheesyblog.blogspot.com/2011/01/not-all-mac-and-cheese-is-ono.html">Gorgeous Goldie</a>, GG for short, sent in this entry over the weekend. GG and her fiance visited <a href="http://www.sidedoorcdm.com/site/">Side Door</a>, which is a fun gastropub located in the the Corona Del Mar landmark <a href="http://www.lawrysonline.com/fivecrowns_gen_info.asp">Five Crowns</a>. If you haven't made it to Corona Del Mar, you are honestly missing out. It is the quaintest little beach town in Orange County; in my opinion, it is Southern California's version of Carmel. <br />

I was working late a couple Fridays ago and was STARVING for anything other than what was in my pantry. I am a nanny, so I can't just run out to grab a bite. Feeling desperate, I turned to Google. I found a local delivery service who brings food from restaurants around town. I decided on California Pizza Kitchen. I live for the their bbq chicken chopped salad. I also decided to order some macaroni and cheese from the kid menu. There was no adult macaroni and cheese option. I know, super lame.<br />
<br />
The macaroni and cheese tasted very boxy and was really bland. I will definitely be sticking to my salad only from now on!Oh So Cheesyhttp://www.blogger.com/profile/00972616245699225552noreply@blogger.com0tag:blogger.com,1999:blog-6094171113183742338.post-50796810294777965532011-03-07T08:00:00.000-08:002011-03-07T08:00:15.537-08:00Hearty Grub Has a Special Place in My Heart<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiG2N3N07gtnCzpGhcaVtYT_lh1gPfzud3kh4Up6EOChSqnYvlyEJoQV79d6JK0h-RZwPd5Gch4YYFSQ5KfIbyiyH7ipcpyqyhiHAX27vc_KmtlG8-iOS_miiKXNT4FYwAUC8fFVfZXR8U/s1600/oh+so+ney.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="96" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiG2N3N07gtnCzpGhcaVtYT_lh1gPfzud3kh4Up6EOChSqnYvlyEJoQV79d6JK0h-RZwPd5Gch4YYFSQ5KfIbyiyH7ipcpyqyhiHAX27vc_KmtlG8-iOS_miiKXNT4FYwAUC8fFVfZXR8U/s320/oh+so+ney.JPG" width="320" /></a></div>Any place named <a href="http://www.grub-la.com/index.html">Grub </a>must be great. The name itself screams CLASSY ESTABLISHMENT. {Yes, that was my attempt to scream.} The restaurant is in a house transformed to a restaurant complete with quirky signs, photos, and little twinkle lights. If you are looking for a place in LA with character, <a href="http://grub-la.com/">Grub </a>is your spot. <br />
<br />
On a pleasantly rainy day, I had a lunch date with my fav barrister bud Brittany. <br />
<br />
We started out with some Homemade Ginger Ale<em></em><span style="color: #769718;"></span><em></em><em></em> and Blueberry Lemonade. Apparently you can get your daily antioxidants in a glass of this delicious lemonade. Oddly enough, it didn't taste like blueberries or lemonade. Tasty all the same. The nice staff even provided us with some munchies while we looked through the menu.<br />
<br />

</tbody></table>After much deliberation, we decided on the Famous Mac & Cheese which was served with a nice light salad to help balance the hearty and zesty chorizo filled, panko topped, oozy cheesy goodness. <br />

We also ordered the tuna melt, descriptively entitled "Hooked!*" The melt was served with black pepper potato chips. The chips were so delicious that I may be back ... just for more chips!<br />

I also recommend finishing off your meal with some potato chip chocolate chip cookies. Yes, you heard me. The potato chips did not overpower the cookie but added an extra special crunch. <br />
Preheat oven to 350 degrees F.<br />
<br />
In a large pot of boiling, salted water cook the pasta to al dente.<br />
<br />
While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.<br />

<br />
Let's be honest, anything bite sized just tastes better. Bite sized cheesecake, cookies, donuts, cupcakes, appetizers, sliders, crab cakes, candy, and mochi ice cream all taste better when they are bite sized. <br />
<br />
I was asked to bring some m&c to my cousin Dave's birthday party. Knowing that he enjoys the finer things in life, I thought that bite sized m&c would be the perfect choice. I found this recipe on <a href="http://www.foodandwine.com/recipes/three-cheese-mini-macs/print">Food&Wine's website</a>. It is really simple to make, calls for ingredients that you probably already have and is classic enough that it will earn everyone's approval.<br />
<br />
First, cook the noodles until almost tender, but not quite. Nobody likes overcooked noodles.<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjZbCTGADu26Kfb97UmXRiMbgQg8tMTmySYrQ5W8mUjDPSF7AKdCySMDiE3915fBwqmA6PmdFkZcM0LZZlf5XmwUSmwLaSO7dDTvBP_yNvll80p8NhLJoPKG05XxVCh5DAeIxBkNpCtZRI/s1600/7.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="213" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjZbCTGADu26Kfb97UmXRiMbgQg8tMTmySYrQ5W8mUjDPSF7AKdCySMDiE3915fBwqmA6PmdFkZcM0LZZlf5XmwUSmwLaSO7dDTvBP_yNvll80p8NhLJoPKG05XxVCh5DAeIxBkNpCtZRI/s320/7.JPG" width="320" /></a></div><br />
<br />
After heating up the butter, add flour, milk, cheddar and American cheeses, egg yolk, and paprika (for a tasty kick)...<br />

My fav thing about this recipe is the use of American cheese. I haven't eaten this stuff in years. In fact, when I was a kid I would have to sneak it because my mom wouldn't let me eat it. It has been so long that I wasn't even sure where to buy it. But, rest assured, your local Trader Joe's carries it. Do you have any fond memories of American cheese?Oh So Cheesyhttp://www.blogger.com/profile/00972616245699225552noreply@blogger.com0tag:blogger.com,1999:blog-6094171113183742338.post-3649687920433511862011-02-25T14:57:00.000-08:002011-02-25T14:57:48.905-08:00Lite Up Your LifeNey and I are working on a joint post on our FAVE frozen macaroni and cheese. Even though I've had the delicious dish a million times, I decided I should purchase another box for writing inspiration. Much to my dismay, when I went to the frozen section of Trader Joe's, the macaroni and cheese was nowhere to be found. Sad face.<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjctM2lLsCdOPaKgLBoFdAfb1W6XhhdHHcv7QKx7w1a05rnWZIK9ThGE0jdQDuFwxXQhLlqjJvcQdkx8d1PVX120Q148XH1MPZPgz33pEUnUYX_w881s5P2CTI3AQqxVnwlMCdLuaxuXt0/s1600/tjlite3.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="640" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjctM2lLsCdOPaKgLBoFdAfb1W6XhhdHHcv7QKx7w1a05rnWZIK9ThGE0jdQDuFwxXQhLlqjJvcQdkx8d1PVX120Q148XH1MPZPgz33pEUnUYX_w881s5P2CTI3AQqxVnwlMCdLuaxuXt0/s640/tjlite3.jpg" width="480" /></a></div><br />
After throwing a tantrum and yelling at the manager (kidding) I reluctantly decided to try the 'less guilt' version of Trader Joe's macaroni and cheese.<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhnAcgHPdf79CuNCj7N1vrWYgBQ98vYq7UoV6I6fB6fLhEDZogTVVxXudV5VVgJge3UTTEDVkGw_eqCMbRDLVhHX52FOuxmtsh2TkrVlvaBInG2_3tDrNNVBPrARnA_jBUoOWuWQx7rbiY/s1600/tjlite2.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="624" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhnAcgHPdf79CuNCj7N1vrWYgBQ98vYq7UoV6I6fB6fLhEDZogTVVxXudV5VVgJge3UTTEDVkGw_eqCMbRDLVhHX52FOuxmtsh2TkrVlvaBInG2_3tDrNNVBPrARnA_jBUoOWuWQx7rbiY/s640/tjlite2.jpg" width="640" /></a></div><br />
<br />
Now, I am SO not into reduced calorie things. I'd rather just skip it entirely, or have a smaller portion of the full calorie version. However, I was so pleasantly surprised with this frozen macaroni and cheese! If I had not known it was reduced guilt, I would never have known it had less calories than the original.<br />
<div class="separator" style="clear: both; text-align: center;"></div><br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEi4xc1YwiYZrhf2M1hmxjjdxVini3AUAK_QCsWaDI8UTVj0fe80ngudmBtRyIIsdGrkeZZ7wzG4o41CkWv6JD6Rk7Dk1Dd_DL6welYvJPIUun0MbJczp7bTBaDuna42XRmy4TLkCiVSSyg/s1600/tjlite1.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="624" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEi4xc1YwiYZrhf2M1hmxjjdxVini3AUAK_QCsWaDI8UTVj0fe80ngudmBtRyIIsdGrkeZZ7wzG4o41CkWv6JD6Rk7Dk1Dd_DL6welYvJPIUun0MbJczp7bTBaDuna42XRmy4TLkCiVSSyg/s640/tjlite1.jpg" width="640" /></a></div><br />

<br />
What is true happiness? Is it money? Is it a big house or a fancy car? Or is it visiting friends and eating a fine mac and cheese dinner? For me, it is definitely the latter.<br />
<br />
Pretty, pretty princess Jenai lives in Kauai. Obviously she is a papaya farmer. Anyway, it is a whole lot easier for me to visit her when she visits her family in Sacramento than making the trek to Kauai. Although I certainly don't mind visits to Kauai! During her last trip to Cali, I flew on up to visit. Because she is the most fantastical friend, she had mac and cheese waiting for me upon my arrival from the airport.<br />

I honestly can't blame them because I wouldn't have been able to resist the cheesy goodness either.<br />
<br />
In making this delightful dinner, pretty, pretty princess used <a href="http://www.foodnetwork.com/recipes/paula-deen/creamy-macaroni-and-cheese-recipe/index.html">Paula Deene's Creamy Macaroni and Cheese</a> recipe but she doubled it (she knew how hungry we were) and <span style="font-family: "Times New Roman"; font-size: 12pt;">added some pepper jack cheese</span>. It was an especially nice addition to pork loin, asparagus and caprese salad.<br />

</div><div class="separator" style="clear: both; text-align: center;">When I moved to Palm Springs two weeks ago, I went to the local 24 hour fitness because that was the gym I went to in Phoenix. Upon exiting my car, I noticed that the gym was directly next door to a movie theatre. I could smell the sweet sweet buttered popcorn wafting through the air. This was not good. I knew I must find a new gym immediately for fear of saying I was going to the gym, but actually bingeing on fake butter and hot dogs in a dark theatre where no one could see the shame and guilt all over my face. </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">So, I decided to find a new gym. </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">{We're getting to the macaroni and cheese part, I promise.} </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">Based on Yelp reviews, all of the gyms in Palm Springs are super horrible. </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">So, I chose based on location. </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">I signed up on Wednesday, and decided that signing up for a gym membership is pretty much the same thing as a workout. </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">And a workout= a REWARD! </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">And a reward=Macaroni and Cheese.</div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">I knew just where I wanted to go. </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">I have been reading about the <a href="http://www.acehotel.com/palmsprings">Ace Hotel </a>and their restaurant,<a href="http://www.acehotel.com/palmsprings/dining/menu"> The Kings Highway Lounge</a>, for about a year on trendy blogger blogs. All the cool hipsters are going. While I usually want to push hipsters on the ground and kick them in the junk, this place looked super cool and had delicious macaroni and cheese on the menu. I phoned in a to-go order (I had my gym clothes on, otherwise I would have dined in. Yes, I had gym clothes on even though I was only going to sign up. Wearing gym clothes automatically makes you skinnier. Duh.) while driving down Palm Canyon to the Ace. </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;"> I must admit. I was a bit worried after the phone conversation I had with the employee who took my order. </div><br />
Tay- "Hi. I'd like to place a to-go order."<br />
Ace- "What can I get for you?"<br />
Tay- "I would like an order of macaroni and cheese and would like to know what is in your steak salad."<br />
Ace- "Ummm, it has steak and salad."<br />
Tay- "Yes, I'd gathered that from the item name, 'steak salad,' what are the other ingredients?"<br />
Ace- "Umm, I don't know."<br />
Tay- "Wellllll, can you ask someone?"<br />
Ace- "Ok. Hold on.................................. I think it has goat cheese on top."<br />
Tay- "Seriously? That's all you've got for me?"<br />
Ace- "Yep."<br />
Tay- "Fine. I'll take the steak salad. Medium rare."<br />
<br />
The steak salad was delicious; the macaroni and cheese was a bit bland (I think it could have used more depth of flavor in the white sauce) but was all better with some seasonings added at home. I loved the pasta to cheese ratio and the bread crumbs. Overall, it was a good to-go experience and I'll definitely be back for another side order of the Macaroni and Cheese. It was creamy and comforting and just what I needed after a long, hard <s>workout</s> gym sign up.Oh So Cheesyhttp://www.blogger.com/profile/00972616245699225552noreply@blogger.com2tag:blogger.com,1999:blog-6094171113183742338.post-7690796468562008052011-02-14T08:00:00.000-08:002011-02-14T08:00:01.116-08:00French M&C is très beau<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjvRbAWf4EIEURZgYU4HDn8LsREGCr_PZ9fcMYelAs59wqiHjqVVMevkZb1LF2Vf_bnWPwitDHHUjBFITInzRHBhNzm8aJMAgKvjANfCsCCwl1YqBU3Q-saN-_dGAzHiTXbsx9fxfazof8/s1600/oh+so+ney.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="60" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjvRbAWf4EIEURZgYU4HDn8LsREGCr_PZ9fcMYelAs59wqiHjqVVMevkZb1LF2Vf_bnWPwitDHHUjBFITInzRHBhNzm8aJMAgKvjANfCsCCwl1YqBU3Q-saN-_dGAzHiTXbsx9fxfazof8/s200/oh+so+ney.JPG" width="200" /></a></div><br />
<span style="font-size: large;"><b style="color: #cc0000;">HAPPY VALENTINE'S DAY</b></span> my dears! <br />
<br />
In honor of Valentine's Day, I am sharing with you one of my favorite restaurants that serves macaroni and cheese.<br />
<br />
Not only is today Valentine's Day but it is also a Monday. Assuming you are working, like myself, the only thing that can make this Monday Valentine's Day bearable is lunch with the girls. Obviously, lunch with the girls with heavenly french mac and cheese is almost enough to forget your holiday Monday blues.<br />
<br />
<a href="http://www.churchandstatebistro.com/">Church and State</a> is becoming one of my favorite stops in downtown LA. It is a great place for a cocktail or a relaxing lunch... or both!<br />
<br />
Even though I have been many times in the past, this was my first time trying their <a href="http://www.churchandstatebistro.com/churchandstate_lunch.pdf">Gratin de Macaronis et Fromage</a>. <br />
<div class="separator" style="clear: both; text-align: center;"></div><div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgSzDF40QF0_1reaX97eg-9p08by2M5SswdBF1NB3NqQ_sUrli5FU75IZD5-lSyvM3RvTh3kdrIjgvOlrklVqvRTWE6bnMmGRx37O6B5agg-A2-lPYAzKOUaxrEHr_CqCb_tBjCF02wL44/s1600/mac+adn+cheese+and+sac+and+craigs+list+004.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgSzDF40QF0_1reaX97eg-9p08by2M5SswdBF1NB3NqQ_sUrli5FU75IZD5-lSyvM3RvTh3kdrIjgvOlrklVqvRTWE6bnMmGRx37O6B5agg-A2-lPYAzKOUaxrEHr_CqCb_tBjCF02wL44/s320/mac+adn+cheese+and+sac+and+craigs+list+004.jpg" width="320" /></a></div><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhXjwviifUSj8q_UwlYlJBUyxXSWpi6B1rGRE5DwvYm1WF9GmoCWNu-UIup1TEGflVOn8YqORVgHpc6VDGhzbXIVfR-qdlbhN_PLzwe72NcEAEosnDz2OMZhZ0e_xNkArje-Ndp8b8JyoI/s1600/mac+adn+cheese+and+sac+and+craigs+list+003.jpg" imageanchor="1" style="clear: left; float: left; margin-bottom: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhXjwviifUSj8q_UwlYlJBUyxXSWpi6B1rGRE5DwvYm1WF9GmoCWNu-UIup1TEGflVOn8YqORVgHpc6VDGhzbXIVfR-qdlbhN_PLzwe72NcEAEosnDz2OMZhZ0e_xNkArje-Ndp8b8JyoI/s320/mac+adn+cheese+and+sac+and+craigs+list+003.jpg" width="320" /></a><br />

<br />
<br />
<br />
<br />
<br />
<br />
<br />
<br />
<br />
<br />
<br />
Let's be honest, I have tried hundreds of types of mac and cheese, all over the world and this dish definitely makes my top 10 list. It had a simple yet rich flavor with what we thought might be hints of truffle oil. It is prepared with a béchamel sauce and Comté cheese which probably added to the strength and subtle sweetness of the dish.<br />
<br />
If you make it to <a href="http://www.churchandstatebistro.com/index.htm">Church and State</a>, I also highly recommend the Tarte aux Champignons and the Croque Madame. <br />

<br />
Hello M&C Lovers,<br />
<br />
We have some news to share here at Oh So Cheesy.<br />
<br />
Tay moved!<br />
<br />
Back to CA. Palm Springs, to be exact.<br />
<br />
Surprise!<br />
<br />
Because I moved this week, I have been kind of a homebody getting settled and such. I also haven't been cooking much.<br />
<br />
But don't worry. I have still been Mac and Cheesing.<br />
<br />
It was late on a Sunday and I'd been working/getting settled all day. I needed some things from the drug store and was craving something comforting and cheesy. I went with good 'ol Stouffer's, a long time favorite of mine. Although it's not my favorite frozen macaroni and cheese (we'll save that for a later post), it is the most nostalgic.<br />
<br />
It still tastes exactly the same as when I would eat it with my great grandmother when I was five. And that's a good thing! Creamy, delicious and comforting.<br />
<br />
Keep it up, Stouffer's.Oh So Cheesyhttp://www.blogger.com/profile/00972616245699225552noreply@blogger.com0tag:blogger.com,1999:blog-6094171113183742338.post-72952665922952600632011-02-07T08:00:00.000-08:002011-02-07T08:00:03.985-08:00Mac Daddy and Cheese Balls<div class="separator" style="clear: both; text-align: center;"></div><div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjcjtiryLXeQ2Z1qxZyQAk8BdcNc3YWw-WrbVrNm_XZXknmnm0aPjkiiT2chBQP2o3R8C2hBuB8fAPEP-7x1VbILPBlzneJyhlTocXH3JXB0l-yreo1fwCmf2YAYQeC6PJ1mL9dyMHVFmw/s1600/oh+so+ney.JPG" imageanchor="1" style="clear: left; float: left; margin-bottom: 1em; margin-right: 1em;"><img border="0" height="60" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjcjtiryLXeQ2Z1qxZyQAk8BdcNc3YWw-WrbVrNm_XZXknmnm0aPjkiiT2chBQP2o3R8C2hBuB8fAPEP-7x1VbILPBlzneJyhlTocXH3JXB0l-yreo1fwCmf2YAYQeC6PJ1mL9dyMHVFmw/s200/oh+so+ney.JPG" width="200" /></a></div><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjI8j45oIroyEVZ8MOR7Si7xmA-ycPiT1YQ2nN6O7ObNStLXWPLPwDJAaQrdQDKzq-9TNEPsa5euSf8mw_V5xKOqfo4gSN2YaqXJTYt64JStzSmPckJm6CfXgxj4PPqAg3zFUrTeem3Oao/s1600/neysays.jpg" imageanchor="1" style="clear: left; float: left; margin-bottom: 1em; margin-right: 1em;"><br />

</div><div class="MsoNormal">True, they could have been served in a tower for a more amusing aesthetic, but lets be real, mac and cheese balls served 24/7 probably don’t need to be pleasant on the eye. </div><div class="MsoNormal"><br />
</div><div class="MsoNormal">As a preface, I love fried items. Fried chicken, chicken fried steak, french fries, fish and chips, onion rings, fried pickles, fried mochi ice cream, the list can go on forever. …. However, these balls just were not up to par. The batter was bland and quite thick; it was hollow inside, meaning it did not have enough cheese and honestly, after much excavation, I could not find one macaroni noodle. I ate 2 but could not bring myself to eat anymore. </div><div class="MsoNormal"><br />
</div><div class="MsoNormal"> Luckily the peanut butter mocha milkshake made up for the undesirable balls.</div><div class="MsoNormal"><br />
